QSR, café, cloud kitchen, kiosk or food truck: choosing your first format

Each format has a different investment, risk and lifestyle. A practical comparison to help you choose.

Food truck and café side by side at a market

Most first-time founders start with a cuisine in mind. We suggest starting with the format. The format decides how much you invest, how fast you can open, how many people you need and what your days will look like.

The formats at a glance

FormatRelative investmentSpeed to openBest forWatch out for
Kiosk or food cartLowFastestTesting a concept, high-footfall locationsLimited menu, rent per square foot can be high
Food truckLow to mediumFastEvents, flexible locations, building a followingPermits and parking rules vary by city
Cloud kitchenMediumFastDelivery-led brands, running several brands from one kitchenPlatform commissions and dependence on ratings
QSRMedium to highMediumVolume businesses with a tight menuNeeds strong systems and location
CaféMedium to highMediumNeighbourhood brands, all-day tradeLong sitting times can limit table turns

Four questions to ask yourself

How much can you invest, and how much can you lose?

Plan for the full set-up cost plus several months of operating costs. If that number is uncomfortable, a smaller format lets you prove the concept first.

Is your product made for delivery or for the room?

Some food travels well and some doesn't. If the experience depends on the atmosphere, a café or dine-in format is the better bet. If it travels, a cloud kitchen can reach more customers for less.

Where are your customers?

Office districts, malls, campuses and residential areas each favour different formats. Footfall patterns should shape the decision as much as your preference.

How do you want to grow?

Kiosks and cloud kitchens can be replicated quickly. Cafés and full-service restaurants grow more slowly but can build a stronger brand.

Start small, design for scale

Many successful brands start with a kiosk or a cloud kitchen, prove demand, then open a flagship. If you design your recipes, SOPs and brand for scale from day one, each new outlet opens faster than the last.
